Shrimp cocktail from the tropics
Dressing
One lime's juice
One orange's juice
2 tablespoons extra virgin olive oil
1 small jalapeno pepper, chopped and cleaned of its seeds and veins.
2 tablespoons of red onion cut into small pieces
Kosher or sea salt, and pepper that has just been ground.
Shrimp Salad
16 large cooked prawns that have been peeled and deveined (size 16/20).
1/3 cup golden raisins from California
1 cup of fresh pineapple, cut up
1 ripe mango, diced
1 firm-ripe avocado, diced
2 spoonfuls of chopped cilantro
2 tablespoons of chopped mint
Lime wedges; to decorate
Dressing
Add salt and pepper to taste after whisking the ingredients together. Refrigerate until needed.
Shrimp Salad
Put the prawns in a medium bowl and add 2 tablespoons of the dressing. Toss the prawns to coat and set aside. Throw in the rest of the salad ingredients, except for the lime wedges, and toss with the rest of the dressing. Cover and put in the fridge.
Divide the chilled fruit mixture between four small bowls or glasses with stems. Top with the prawns (there should be at least four per serving) and lime wedges.
You can prepare salad ingredients up to an hour ahead of time and put them in the fridge until you're ready to serve.
