FRIED CATFISH IS A CLASSIC
3/4 cup corn meal, yellow
1/4 cup all-purpose flour
2 teaspoons salt
1 teaspoon of cayenne
1/4 teaspoon of dried garlic
4 Catfish Raised in the U.S.
fillets
Vegetable oil
As a garnish, thin slices of tomato
and a bunch of parsley
Mix together the cornmeal, flour, cayenne pepper, garlic powder, and salt. Coat the farmed catfish with the mixture and shake off any extra.
Half-fill a 12-inch deep pot or skillet with vegetable oil. Bring to 350°F. Catfish should be added in a single layer and fried until golden brown, which takes about 5 to 6 minutes, depending on the size. Take it out and let it drip on paper towels.
