Here is an easy-to-make meal for breakfast, lunch, or dinner that uses key ingredients from the dairy aisle:
Vegetable Cheddar Quiche
1 cup red, green, or yellow bell peppers, chopped
3/4 cup of sliced mushrooms
1/4 cup of cut-up onion
1 cup refrigerated egg substitute
1 cup of non-dairy creamer in the fridge
1/4 tsp salt
1/8 tsp pepper
1 oz shredded Cheddar Cheese
Heat a 10-inch skillet, spray it well with nonstick cooking spray, and saute peppers, mushrooms, and onions until they are soft but still crisp. Mix the egg substitute, creamer, salt, and pepper together. Pour the mixture into the skillet, cover, and cook over medium-low heat for about 8 to 10 minutes, until the mixture is set. Put cheese on the quiche and put the lid back on until the cheese melts. Take it off the heat and let it sit for 2 minutes. 4 people.
